i think it's not all up to them. the respective managers may have given them more specific instructions and thus reined in their attacking instincts. of course we all like to watch a final where both teams go for it with all the flair in the world when attacking, but to do so would leave space that opposing teams can exploit.
besides, after two disappointing FA cup final defeats in which we were clearly the better side, i'd rather see United struggle and win than to play well and lose.
