Do you prefer comfort(silent) or performance(better airflow)?
Far cry 3 on 1080 on highest res, single 680 or single 690 is enuff... SLI 680 is abit overkill unless you are doing heavy graphic rendering...

Yes, u need at least a 2way or a 3way SLI depending on the graphic card...
The difference between mid tower and full tower is the size... A full tower can be big and impressive looking, but if you are those type to bring it around for lan-parties at your friend house or such, then it can be abit cumblesome...

To be honest GTX680 in SLI configuration is not optimal in terms of price to performance ratio. I would suggest you go with either GTX670 in SLI, or even GTX660 TI in 3-way SLI.
SSD for RAID is a bit too expensive for your budget. But if you must, use something like OCZ Vector, or another model that supports TRIM in RAID 0 configuration.
PSU, go for something like Seasonic, or another OEM manufacturer. Corsair, Cooler Master buy their PSUs from Seasonic and the likes, and relabel them and sell them at a slightly higher price.
