palm, blended (like Knife brand), soy bean, groundnut (but super ex) oils are good for Asian style frying. of course ah Bear would say lard
Canola, sunflower are good for stir frying.
I've no idea abt corn oil
corn oil very sticky le
lard has the most flavor

this morning, mom taught me how to stir fry "shanghai style nian gao"..
prepare this, boil this, put this put that.....stir fry a bit.. oki liao ..:)

anybody knows?

corn flour is starchy one.
in anyway roux should be w/ normal flour + fats i.e. butter

in anyways at home I use Knife for frying i.e. fish and Naturel for stir frying i.e. vegetables. It's only when wanna fry more food during events like CNY then go use palm oil like Duck brand (one of the best palm oil).
