usually i use the British 's', some might like the American 'z'
but one thing for sure, if one is writing a report, essay or whatever, need to be consistent -

British writing - I need to remind myself, or my O's will be filled with S's and Z's.

I don't know why, but I prefer American spelling in general; "color", "gray"...etc etc. -

I usually use Z, yet I stick to 'colour' instead of 'color'.

Mostly use 'Z' coz looks more cool also also easier to differentiate from other words. But sama sama I stick with 'colour'
