3-5 star hotels, service apartments usually..
Ive stayed at hotels ranging from 2.5 to 5 star. I stayed in the 2.5 star kingsgate hotel in Melbourne and in the Hyatt Regency in Philadelphia. I've also stayed in Japanese style hotels with the tatami and all. I am now in Sheraton New York in Manhattan at 53rd st/ 7th ave.

the 5 star ones were forgettable ...
it's the lok kok budget ones that stuck in my mind ....
1. floating lodge house on the river kwai, upriver from the death railway, run by this thai lady from boston, i spent half the night feeding the mozzies and drinking beer on the verandah looking at the river, and chatting with two swedish backpacker babes on the next verandah .... in the depth of the night you can see faint glows of light that some locals says are fireflies, and others the spirits of the multitude of allied soldiers who died in the area ....
2. beach cottage at koh samet national park ... beer was expensive, there was no running hot water, but the company and the view was awesome .... went around in only broadshorts or a sarong, barefooted, BBQ seafood dinner at a beach shack with tables right near the edge of the waveline at sunset .... I promised myself I'll bring my final dearling there one day ....

some of the recent hotel/motel/guesthouses i stayed a month plus ago...now collapsed into a pile of rumbles..@ sichuan...and i cannot remember the names liao..
anyway, to add, on, sydney novotel reception service sucks like hell..
hired prc ppl (im not joking...) and all day show black face
Service apartments are better and cheaper than a 5 star hotel and besides you wont be at the hotel most of the time except to sleep.
i travel a fair bit and the ....most memorable are:
1. a detour i made while on a europe trip where i stopped over in copenhagen for 2 nites. it is a boutique hotel a stone throw away from tivoli garden and i cannot remember what it's called now. everything there is decidedly old school and 60's. from the elevator, to the door knob and everything. very cool.
2. queen mary ship, which is now permanently docked in long beach, california and converted into a hotel. it is actually not a nice experience because everything is so claustaphobic, and the broadband don't work properly. i stayed there for 3 nites.
3. manchester hilton in san diego. not so much for the hotel but more on the day i was there. the us navy was commissioning the USS reagan aircraft carrier there at the naval base in coronation island. my room was on the 25flr in the hotel and i have a bird's eye view of the whole proceedings.
4. youth hostel in thredbo, NSW last year. the day we arrived, it started snowing. we booked an entire bunk to ourselves so there is a lot of fun for the family as we can cook, hangout and do a bit of community living there.
