it's easy! just like making braised duck... simple steps...
recipe for braised duck:
equal parts of 5-spice powder and salt..
smear all over outside and inside of duck (careful to clean duck well.. very well..)
be generous with the spice..
put duck with spice smeared all over in a plastic bag and bung in fridge for about 3 to 4 days...
on day you wanna make the duck, get deep wok...
wash spice off duck, both inside and outside of the duck.. not to thoroughly.. just rince the stuff off..
melt a handful of sugar until it becomes a black treacly mess...
pour about 3/4 to a bottle of dark soy sauce (semi-high quality.. not the premium one coz need the saltiness)
bring to boil..
place duck in the boiling black stuff and "bathe" the duck in the stuff.. turn duck over every 15 minutes.. repeat until duck is golden brown..
then add water until about cover the duck.. allow to simmer, moving the duck periodically to ensure it does not burn.. turning over every 15 minutes...
the duck is done when you stab the thickest part with a fork and it does not bleed.. the liquid that comes out is clear.. usually after about 2 hours..
there.. braised duck done to perfection
