for the type of cam u are using (point and shoot rite?) it's almost impossible to get "those" type of shots.
let's just say ur shot. u shot it in pretty harsh sunlight? possibly close to the middle of the day? (shadows are very harsh and short). such shots are hard to get "nice" becos the sun is way way strong, washes out the colour, and the shadows are very distinct. try to shoot when the sun isn't as harsh. as for the blue sky, many photogs use a polariser which (without technical explanations) is a filter that makes "skies bluer")
now, if u do shoot in the evening, in theory the sky is still brighter than the ground. that's why u'll have problems exposing, if the ground is bright enuff (properly exposed) the sky will be too bright (over exposed). if the sky is just nice, the ground will probably be too dark. this too, can be fixed with a filter called a ND graduated filter (basically a "pair of sunnies" for the camera where top half is darker then the bottom half). that's why i say if u are using a p&s it's gonna be almost impossible to shoot "those" type of pics since u prob can't use those filters on that cam. but.. there's always photoshop!
to be honest, photoshop can be a digital photographer's "bag of filters". can try around and see if it works.
